This recipe is an approximation of a delicious side dish we had at a friend’s BBQ. Just estimate which quantities you would like, and play with the combinations until you find a flavour mix that suits your taste.
Ingredients
- Large bunch of fresh parsley (finely chopped)
- 4-6 cloves garlic (finely chopped)
- Generous pour of olive oil
- Smaller pour of red or white wine vinegar
Method
Combine chopped parsley and garlic in a small mixing bowl. Add olive oil to coat, not to soak and stir through. Add a smaller pour of white wine vinegar, and taste test along the way to get a ratio to your taste. Serve with barbeque meats, especially steak. Seriously yummy.
*You can modify the recipe by using oregano and/ or coriander as additions to the parsley.
